Flourless Almond Cake with Raspberry Sauce

Step 1: Preheat & Prepare

Preheat oven to 350°F (175°C).
Grease and line an 8-inch (20 cm) round cake pan with parchment paper.

Step 2: Mix the Wet Ingredients

In a large bowl, whisk together:

  • Eggs
  • Sugar

Beat until slightly pale and fluffy (about 2–3 minutes).
Add melted butter, vanilla, and lemon zest.

Step 3: Add Dry Ingredients

Fold in:

  • Almond flour
  • Baking powder
  • Salt

Mix gently until smooth and fully combined.

Step 4: Bake

Pour batter into the prepared pan and smooth the top.
Bake for 30–35 minutes, until:

  • The top is golden
  • A toothpick inserted in the center comes out clean

Let cool in the pan for 10 minutes, then transfer to a wire rack.
